• 1 large red onion 
  • 2 cloves of garlic – crushed  
  • 1 red pepper – roughly chopped 
  • ½ tsp smoked paprika  
  • 100g chorizo – diced  
  • Handful of fresh cherry tomatoes 
  • 4 medium eggs 
  • 50g Colston Bassett Stilton  
  • Salt and freshly ground black pepper to taste 
  • Fresh chilli and parsley to garnish  



  • Preheat oven to 200°C/180°C fan/gas mark 6 
  • Heat the oil in a non-stick, ovenproof frying pan 
  • Add the onion and stir over a medium heat for 4-5 minutes until soft 
  • Add the pepper, garlic and paprika and continue to cook for 2 minutes 
  • Add the tomatoes, chorizo and seasoning to taste 
  • Crack each of the eggs into the pan and crumble the Stilton over the top 
  • Transfer the pan to the preheated oven for 10 minutes or until the eggs are set  
  • Scatter over the parsley and chilli and serve with crusty bread
